To be able to tell stories in all kinds of media, especially writing, was always a lifetime goal for Emma. Writng allows her to share advertisements, sales, events, etc. in very descriptive, persuasive ways.

Dining Services Home Webpage Opening Statement

     November is National Native American Heritage Month and we're partnering with multiple different departments on-campus to celebrate the rich history and many contributions made by Native Americans to this country’s cuisine! Join us at Vail Commons on November 8 from 11 am. to 2 p.m. to indulge in delicious Native recipes from an Emmy-award winning Native American Chef!

     Loretta Barrett Oden, member of the Citizen Potawatomie Nation and Native American Chef, shares the true importance behind the cultural blend of Native American cooking in her new cookbook, Corn Dance: Inspired First American Cuisine. Our Choices on Sustainability Efforts Website

     Incorporating sustainable practices has a clear positive impact on our program. We approach every product and procedure with the three R's in mind: reduce, reuse, and recycle. Here are just a few examples:

  • Reduce - By minimizing food waste in Vail Commons, we reduce the amount of food waste generated. We allow guests to self-serve to control their portions, eliminate trays that might encourage overloading, and batch cooking throughout the meal instead of preparing everything at once.

  • Reuse - Dining Services implements several eco-friendly reusable practices. These include washing and reusing our dishes at Vail Commons and Wildcat Den, as well as introducing the Green Box Program. With this program, guests can take their meals to-go without relying on single-use containers, reducing our environmental impact while still maintaining flexibility.

  • Recycle - Dining Services places a strong emphasis on recycling items such as paper, plastic, metal cans, cardboard, and cooking oil. Additionally, they compost both pre- and post-consumer food waste to reduce environmental impact.

     Nutrition, variety, freshness, and sustainability are our top missions. Satisfy your cravings with our wide range of dining options, like our home-style favorites, international dishes, plant-based options, or late-night snacks. Our selection ensures guests find what they want to eat, whenever they want.

     Yesterday was Indigenous Peoples Day and we wanted to share how we're celebrating the rich history and many contributions made by Native Americans to this country’s cuisine! Indigenous ways of life and traditions are highly connected to the environment and the foods it provides. From distinct crop growth, to cooking methods, most Native Americans were hunter-gatherers. They relied on easily accessible food, like beans, corn, wild rice, and common game found in the area. Each tribe not only had its own language but also cuisine that set them apart.
